These cookies have a rich cocoa flavor combined with marshmallow topping, hence the name Hot Chocolate Protein Cookies! They're not only delicious, they're lower in carbs and sugar, and higher in protein than your average cookie.
NOTES: We used coconut flour, but you can also use twice as much baking flour such as gluten free or all purpose flour. We also used almond butter in these, but any neutral flavored nut or seed butter will work. You can also swap the marshmallow for sugar-free if desired.
Hot Chocolate Protein Cookies
Makes 9 cookies
Ingredients:
1/2 cup (60g) Metabolic Nutrition Protizyme in Chocolate Cake
1/3 cup coconut flour
1/4 cup calorie-free brown sugar alternative
2 tbsp. unsweetened cocoa powder
1/4 tsp. baking soda
1/4 tsp. salt (optional)
1/4 cup almond butter
1/3 cup unsweetened applesauce
1/4 tsp. pure vanilla extract
3 tbsp. dark chocolate chips
6 regular marshmallows, halved
Directions:
Preheat your oven to 350 degrees F.
Whisk together dry ingredients (through salt) in a medium mixing bowl.
Add wet ingredients (through vanilla) and mix until combined.
Fold in chocolate chips. You can also save to melt and drizzle over top!
Using 2 tbsp. scoops, roll dough into balls and space out on a parchment-lined baking sheet.
Press cookies slightly flat, then bake in your preheated oven for 12-14 minutes until soft but cooked through.
Meanwhile, cut six marshmallows in half crosswise, setting cut side up.
Once cookies are out of the oven, press half a marshmallow into the center.
Enjoy cookies warm, or keep in the fridge in an airtight container for up to one week.
