These Patriotic Protein Sugar Cookies have all the iced sugar cookie flavor we love, minus all the sugar! Definitely our favorite 4th of July protein treat. You're going to love the buttery, crumbly cookie base with sweet icing and festive sprinkles on top.
NOTES: We used Swerve granulated sweetener for the cookies and Swerve confectioner's for the frosting, but you can use whatever sweetener you like so long as it measures like sugar. We also used Earth Balance vegan buttery spread, but you can use unsalted butter too.
Patriotic Protein Sugar Cookies
Makes 10 cookies
Ingredients:
1/2 cup (60g) Metabolic Nutrition Protizyme in Vanilla Cake
3/4 cup (90g) gluten free baking flour
1/4 cup calorie free sweetener
1/4 tsp. baking soda
1/4 tsp. salt
3 tbsp. buttery spread
3 tbsp. cashew butter
3 tbsp. unsweetened applesauce
1-2 tbsp. unsweetened almond milk
Frosting:
1/2 cup powdered sweetener
3 tbsp. unsweetened almond milk
1 tbsp. buttery spread
1/8 tsp. vanilla extract
5 tsp. sprinkles
Directions:
Preheat your oven to 350 degrees F.
Whisk together dry ingredients (through salt) in a medium mixing bowl.
Add wet ingredients (through almond milk) and mix until a soft dough forms.
Taking two tablespoons of dough at a time, roll into balls and place on a parchment-lined baking sheet about 2" apart.
Bake in a preheated oven for 10-15 minutes until set in the center but soft.
Meanwhile, combine frosting ingredients until smooth.
Once cookies are mostly cool, spread frosting over top cookies.
Add about 1/2 tsp. sprinkles over each cookie and enjoy! Leftovers will keep in the fridge in an airtight container for at least a week.
