These are the only cookies worth turning your oven on for! S'mores Protein Cookies! These soft baked and chewy cookies are full of melty chocolate, fluffy marshmallows, and bits of graham cracker. Even though they taste out of this world, the calories are still surprisingly low per cookie!
NOTES: We used cut-up vegan marshmallows because they don't melt away when baked. However, if you use regular marshmallows, just chill the cookies for a couple hours before baking. Feel free to substitute the coconut flour for twice as much oat flour if that's all you have. We used Swerve brown erythritol for these cookies, but use whatever sweetener you like.
S’mores Protein Cookies
Makes 9 cookies
Ingredients:
1/2 cup (60g) Metabolic Nutrition Protizyme in Peanut Butter Cookie
1/3 cup coconut flour
1/4 cup calorie-free brown sugar sweetener
1/4 tsp. baking soda
1/4 tsp. salt (optional)
1/4 cup almond butter
1/4 cup unsweetened applesauce
1 tbsp. egg white
1/4 tsp. vanilla extract (optional)
3 tbsp. dark chocolate chips
1/3 cup mini marshmallows
1 sheet graham cracker, crushed
Directions:
Whisk together dry ingredients (through salt) in a medium mixing bowl.
Add wet ingredients (through vanilla) and mix until a soft wet dough is formed.
Mix in dark chocolate chips and marshmallows.
Using two tablespoons of dough at a time, make cookie dough balls and arrange 2" apart on a parchment-lined baking sheet. Press flat slightly.
Bake in a preheated oven for 12-15 minutes.
